Cover with a damp cloth and let it rest for 45 minutes.\n\nStep 4\n\nShape the dough balls into baguette.\n\nWorking with one piece at a time, flatten the dough slightly then fold it nearly (but not quite) in half, sealing the edges with the heel of your hand.\nWith the seam side down, cup your fingers and gently roll the dough into a  log (size matching your pan).\n\nStep 5 \n\nFinal proofing\n\nPlace the logs seam-side down onto a lightly greased or parchment-lined sheet pan or pans; or into the folds of a heavily floured cotton dish towel (or couche). Cover them with lightly greased plastic wrapper a damp cloth, and allow the loaves to rise until they're slightly puffy . The loaves should certainly look lighter and less dense than when you first shaped them, but won't be anywhere near doubled in bulk. This should take about 45 minutes to an hour at room temperature (about 68\u00b0F).\n\nTowards the end of the rising time, preheat your oven to 450\u00b0F .\nIf your french baguette bread have risen in a dish towel or couche, gently roll them (seam side down) onto a lightly greased (or parchment-lined) baking sheet on to a non stick baking tray. If you plan on baking them on a baking stone, roll them onto a piece of parchment, and lift the parchment onto a baker's peel.\n\nUsing a baker's lame (a special curved blade) or a very sharp knife held at about a 45\u00b0 angle, make three to five long lengthwise slashes in each baguette.\n\n\nStep 6 \n\nBake the french bread\/ baguettes\n\nLoad the french bread\/baguettes into the oven. If you\u2019re baking on a stone, use a baker\u2019s peel to transfer the baguettes, parchment and all, onto the hot stone. \nCarefully pour the boiling water into the cast iron pan, and quickly shut the oven door. The billowing steam created by the boiling water will help the baguettes rise, and give them a lovely, shiny crust.\nBake the baguettes \u2014 on the pan, or on a stone \u2014 for 24 to 28 minutes, or until they're a very deep golden brown. \nRemove them from the oven and cool them on a rack.\n\nStoring Baguette\n\nBaguettes are best when they are fresh out of the oven.Authentic Baguettes have a very short shelf life..It's a daily bread and should ideally be consumed the day of use. (Who can wait anyway?) If you need to store bread for longer periods of time, you should freeze it.\n\nThe best way you can store a baguette is by freezing them.\n\nStep 1 \n\nPrepare a fresh baguette for freezing as soon as possible after baking. Let the baguette cool completely. Place it in an airtight freezer bag, squeeze out the extra air and zip it closed. If the baguette is too long to fit into the bag, cut it into pieces.\n\nStep 2\n\nStore the baguette in the freezer until several hours before you need it.\n\nStep 3\n\nRemove the frozen baguette from the freezer bag, wrap it in a tea towel and thaw it on the counter for two hours, or until fully thawed.\n\nStep 4\n\nHeat the thawed baguette in the oven at 200 degrees Fahrenheit for a few minutes to warm it, if desired. That long cry from the heart of Michelangelo, Catherine of Siena, Martin Luther King, Maria Callas and of all those whose sublime fruits were never known by this world's generations, all came from one cry. On a cold afternoon and under the blackened skies covering the Earth's womb, a voice in the wild pierced the hearts of all the living that ever were minted from the dirt of our mountains and deserts. On a cold afternoon, the voice of Love pierced the dark vault above and reached Itself in the Father's Bosom after It had been pierced by nails as punishment for having shared Itself. And as the Son of Man commenced His Spirit in His Father's Hand before dying, so will do all those who give themselves to others in the way He Did. It was behind the appearance of poverty that the riches of a King were never to be seen through human sight. Honored by men with a crown of thorns and a thousand spits, this King was the very incarnation and origin of Babette's words 'An artist is never poor'. Before carrying the cross of her own poverty and before entering Christ's given chance to delight the angels as the artist that God meant her to be, it was the long cry from the heart of The Master Artist which was cross and delight for all on earth and in Heaven.\nNow, the Teacher gave His student the chance to do her very best by giving away that culinary masterpiece which delighted the palates of all those men and women who never were meant to know that the author of the greatest feast they ever experienced was the Master Chef at the Cafe' Anglais. Never will they know this. Never will they have the chance to thank her and never will they learn that the price of such free gift came at the cost of her now life long poverty. The signature of her art-piece was omitted as to not corrupt the purity of her charity as a sort of fast from praises and self-approbation.
